    • The liver stores glucose to be broken down later.
    • The enzymes the liver produces are water soluble.
    • Fat is hydrophobic though, so Bile keeps fat in small drops so it doesn't turn into a form where they form a large surface area (which then makes it harder for bile to break it down).
